Lime and Kiwi Sorbet...


I found this recipe in this months Slimming World magazine and just had to try it!
I mean look at it,  doesn't it scream 'eat me I'm delicious!' And at only 3 syns per serving its almost perfect. 


 Here is how you make it.


Ingredients

6 kiwi fruit, peeled and roughly chopped
1 lime finely zested and squeezed of all its limey goodness
2 tbsp swettner
1 tsp grated ginger ( they use ground but i prefer the heat and flavour from fresh)
1 ball of stem ginger in syrup, drained and finely chopped ( I didn't have this so i just left it out)

Method

1. Put the kiwi, lime zest, juice, sweetner and ginger into the blender, add 300ml cold water and blend until smooth.
2. Pour into a shallow freezeproof container, cover and freeze for 5-6 hours, or until set.
3. Once frozen transfer to the blender and blender until smooth. - I however did not do this but instead used a fork to break up the ice crystals every hour or so.
4. To serve spoon into a glass and decorate with slices of kiwi.



This sorbet is incredibly easy to make and has the most amazing fresh flavour. Perfect on a hot summers day! You could even add a little vodka to the mix if you feel like being a little naughty!
