Fragrant chicken meatballs with sweet chilli wholewheat noodles...



I was browsing the Slimming World website yesterday for recipes and came across a few turkey meatball ones. Now I am really not a turkey fan but the recipes did however inspire me and got me hooked on the idea of meatballs and from there I come up with this recipe. Its a lovely summery dish that can be served hot or cold.


This recipe serves 3.

Fragrant Chicken Meatballs


Ingredients

2 large skinless chicken breast, chopped into cubes.
1 large clove of garlic, grated/crushed
1 large thumb of ginger, peeled and grated/crushed
Large handful parsley, roughly chopped. Keep some aside for the sauce and garnish
1 tbsp soya sauce
sesame seeds to garnish

Method

1. Put everything into a blender and blend until the chicken is at a mince like texture. Don't blend to much as you don't want it to tern into a paste, you still want a bit of texture.
2. With wet hands mould into balls. A tad smaller then a golf ball but really its up to you.
3. Place on a baking tray and bake for 30 - 35min depending on the size. Keep covered as you dont want them to dry out. (You could also fry or steam them)
4.Once cooked through leave to one side and get on with your noodles.



Sweet Chilli wholewheat Noodles


Ingredients

3 nests of wholewheat noodles
3 tbsp Soya sauce
3 tbsp sweetchilli sauce
3 tsp toasted sesame oil
1 tsp parsley roughly chopped

Method
1. Put your noodles onto cook. Should take about 4 minutes.
2. While the noodles are cooking add the soya sauce, sweet chilli, sesame oil and parsley to a bowl and stir to combined.
3. Once the noddles are cooked, drain and add the sauce straight away.


To serve, put the noddles into the bowl, add the meatballs, drizzle with soya sauce and garnish with parsley and sesame seeds.

This is so scrumptious!!

The meatballs by themselves would be perfect for a picnic or even just a snack in the fridge. The whole meal comes to about 5 syns pp but could be less if you used ASDA Sweet chilli sauce, I used Blue Dragon.
