A Sunday Rescue...

This afternoon I rescued this tiny little mouse from my Cat Mandy's jaws of death! As much as I love my cat and other cats I can not bare how they feel the need to bring us presents of tiny creatures and birds. Alas  there is nothing much we can do as Cat owners but save as many as we can :)

This little guy was one of the lucky ones and in our short time together he brought us a lot of joy and my son beamed from ear to ear whilst in his tiny presence. Im sure Benji would have loved to have kept him and I know he is only little but I think it was good for him to learn that some things need to be set free and put where they are most happy.

So after telling Benji the little mouse had to go home we said our goodbyes and watched him scurry back into the bushes. It was a sweet moment that ended with Benji wondering where it had gone, bless. I do love watching him grow up, learn and experience life.

Blueberry, Lemon and Mint Lollies...

I am desperately trying to hold onto summer with this recipe as the weather is already turning and is not exactly suitable for lollies but who cares, who doesn't like a fresh fruit lollie!

I came up with these little frozen delights as treat for my teething son and as a tasty sweet desert alternative whilst i'm on Slimming World. But don't be fooled buy the word 'slimming', these lollies are packed with flavour, texture and goodness.

Ingredients

1 cup of fresh or frozen blueberries and a few to pop in whole.
handful of mint
half a lemon squeezed
1 cup of water
2 tbsp sweetner or sugar (the sweetner makes it SW friendly)

Method

1. Pop everything into a blender and wizz until smooth.
2. Pour into your lolly mould, sprinkle with a few whole berries and freeze.

How simple is that!!!!!!!!

This recipe make 4 small/medium lollies but it really depends on your mould. For SW ladies/men I think this would be about 1 syn because of the fruit being blended, but i am not 100%.

You could do this with all sorts of fruit and in fact the kiwi and lime sorbet recipe I posted a few weeks back would make a delicious lolly! Just have fun and go mad, the most delicious recipes come to life when you do.

Birthday Delights - Raspberry and Cream Cake...

Yesterday I had a fabulous day celebrating a dear friends Birthday!
My friend Lauryn has been such an Angel to my family and I am truly blessed to have her in my life!! So I spoilt her the best way I know how, with a fabulous summery raspberry and cream Birthday Cake!!

Ingredients

175g unsalted butter
175g golden caster sugar
3 medium eggs
175g self raising flour
1 small can of raspberries in syrup
300ml double cream
1 tbsp valilla extract
a little icing sugar
Handful of raspberries to decorate

I then halved the cake recipe for a 3rd layer

Method

1. Grease two 18cm tins and preheat the oven to 160 C fan assisted.
2. Cream the butter and sugar until fluffy and then add the eggs one egg at a time, beating after each one. If it looks like it is starting to curdle add a little of the flour.
3. Once mixed fold in the flour.
4. Divide between the greased tins and pop in the oven for 20 - 25 minutes until they are risen and spring back to the touch. leave to cool in their tins for 5 minutes then turn out and leave to cool completely.
5. While you are waiting for the cakes to cool, beat your cream with the vanilla until firm but still light and spreadable. You can add a little icing sugar/caster sugar if you like, about a tbsp.
6. Once cooled lightly brush your cakes with the raspberry syrup and then spoon on the soft raspberries and vanilla cream. Sandwich them together and then dust with icing sugar. Decorate with fresh raspberries.

This cake is truly scrumptious and a perfect summery indulgent treat for any Birthday girl!

Happy Birthday Lauryn!

I'm crazy about Crazy Colour...

Now I don't do beauty posts often and this probably wont change. When I use to be a beauty blogger I would spend so much on beauty products that I never ended up using and to be honest these days my makeup/beauty routine is pretty basic. So lets say when I do do a beauty post its because I really love the product and use it ALOT!! And that's why I want to share it with you.

Since losing allot of my hair to Cancer earlier this year , I have been wearing allot of wigs. But now that my hair is growing back and I am able to style it a bit, I have been enjoying it more and more. So much so that I have been going a little crazy when it comes to the colour. I have gone from Peacock Blue to Violet and just recently Lavender, Candy Floss Pink and Bubblegum Blue - current colour. And I am able to do all this damage free thanks to Crazy Colour!!

Crazy Colour is fantastic semi-permanent hair colour cream that tints and colours your hair the most amazing shades. You just apply to damp hair, leave for about 30min or so and wala you are transformed. As it is only semi permanent hair colour it will fade with every wash, so if you choose a very vibrant/bright colour you will need to keep applying the colour. But I found with the pastel colours it doesn't really matter when it fades, it just gives you a more subtle look.

You can find Crazy Colour in most hairdresser supply shops, on Amazon, Ebay and the Crazy Colour website. I love this colour so much! Its a cheap and a fantastic way to change your appearance and give you an extra bit of colour in your life.

So if you fancy a change, go Crazy and try Crazy Colour.

Lavender Farm

Last Friday my dear friend Candi came to visit from London and we took a trip to the Lavender Farm in Hitchin. I have been wanting to go all summer and I am so pleased that I finally made it and just in time as flowering season is between the end June and the end August.

I cant begin to tell you how beautiful it is there! The gorgeous purple landscape, the air filled with the scent of lavender and the sound of buzzing bees. It was a true feast for the senses.

Not only do you get to take in the gorgeous scenery but on arrival you get given a pair of scissors and a brown bag and are told to pick as much Lavender as you like. And at £4 entry its AMAZING! I was so excited! :)

My son, nearly 16 months, loved it too! The lavender was as tall as him and made it super fun to walk in. Like a mini adventure in a new land. We couldn't get him out when it was time to go home.

Another unexpected bonus was the Sunflower field. It was magnificent!! Just rows and rows of giant golden yellow beauties facing into the sun. I could have stayed in there all day. I was amazed at how big some of them were . They were towering above my son, talk about another world. He must of felt what its like to be an insect exploring the world of flowers. And at 50p per sunflower, no matter what size, you could take some of  natures sunshine with you.

After our amazing afternoon in the flowers we headed to the barn to enjoy some delicious Lavender Earl Grey tea and cake. I can not encourage you all enough to visit! Its gorgeous and would make for a wonderful family day out, Hen Do Picnic or even Wedding venue. Just imagine the pictures. I cant wait to go back next year.
